Summer Veggies, Italian Sausage, and Pasta

This is one of our very favorite dishes to make on Italian night in summer time. It is so light and delicious! It is also pretty amazing that this is a one pot meal that won’t heat up your entire kitchen!

Our favorite thing to serve our summer veggies, sausage, and pasta with is bruschetta with roasted garlic. Its the perfect meal!

One of the best things about this dish is you can switch it up in a thousand ways and make it your own. Feel free to use hamburger instead of sausage. For the fresh veggies, use what you have on hand or what you have growing in your garden.

Don’t be afraid of the Swiss Chard! It adds such delicious flavor! But you can use spinach instead.

This dish is more veggies than pasta, making it fresh and light! The flavors come together to make a wonderful meal. Once your pasta and veggies are cooked, top with Parmesan cheese, finishing salt, and pepper. So delectable!

Grilled Chicken with Dad's Sweet BBQ Sauce

Growing up, Sr. Food Nanny’s dad was great on the old fashioned potbelly grill with coals that you waited for hours to get ready. He rolled whole onions, corn on the cob, and just about everything else in aluminum foil and placed them individually on the grill to cook. They were done to perfection and delicious every single time!

Today, we no longer use an old fashioned potbelly grill at our house. But we love to remember this great man by his unbelievable BBQ sauce. He basted most of his meats with this sauce and we still love it.

We love smothering hot grilled chicken with this sauce. It gives it the best flavor! You can prepare your chicken on a traditional grill or even on a smoker, like the Traeger!

Next, if you aren’t a fan of all the different chicken parts, just use what you like! As always, feel free to make this recipe work for your families needs. Leave out anything you don’t like.

We love serving this chicken with rice pilaf, grilled vegetables, and some delicious summer fruit. It makes such a filling, delicious meal.

This is a quick and simple meal for lunch or dinner. You would never guess how easy it is based on how delicious it tastes! Its the perfect meal for one, or even for the whole family.

Both adults and kids love this dish! It reminds me of a Spaghetti Carbonara, but with fewer ingredients.

In Italy, this is a starter dish for their meal. But here in the US, this serves as the main course. You can serve it along side side, chicken, or beef if you would like. Make sure to provide plenty of green veggies, such as artichokes, brussel sprouts, or broccoli. We also love to serve a warm bread on the side.

Plan to make this on your busiest weeknight. You won’t believe how quickly and easily it comes together. The whole family will love it!

Chocolate Fondue is one of our absolute favorite desserts! It makes any occasion feel special.

We think this is the perfect dessert to go with your Valentines Day plans. And the best part is, you won’t be working on it all day! All you do is add all the ingredients to the Fondue pot!

If you don’t have a Fondue pot, you can still make it! Just add everything to a pot on the stove. It is trickier to keep at the right temperature and isn’t quite as romantic, but it is just as delicious.

Something we love about this dessert it that just about everyone can find something they love with it. There are so many different dipping ideas for this! We have even heard of people dipping potato chips. You can customize it for even the pickiest eaters.

Coconutty Cereal Treats

This recipe was first introduced to us by our daughter/sister in law Shana. She brings this treat to all of our family gatherings. It didn’t take long for the whole family to be hooked!

Once you take one bite of it, you won’t be able to put it down. It is perfect to bring to all your family gatherings. Or it would make a perfect neighbor gift around the holidays! Put it in some cellophane and add a cute ribbon. And just like that, all of your neighbors will be calling you the best cook in town!

Everyone who tries this asks us for the recipe. The flavors work perfectly together! It is so satisfying and delicious.

Possibly the best things about our Coconutty Cereal Treats is how easy they are. Just one batch makes 16 servings and is ready to go in a matter of minutes.

The one thing people sometimes do wrong is boil the butter, corn syrup, and sugar for too long. I try and keep it boiling for only 2-4 minutes. If you go 5 plus minutes, the mixture will harden like a rock when adding it to the cereal. Don’t overthink it, just make sure and not leave it on for long.

This treat isn’t just a dessert. We have found it makes the perfect after school snack too! My kids will gobble it right up. It is a fun way to mix things up.

Authentic Margherita Pizza

Authentic Margherita Pizza

When we think of authentic Italian pizza, this is what we think of! It is what I make when I am craving a little piece of Italy.

Margherita means red sauce, green basil, and white cheese. Think of the Italian flag! So much fun.

In Italy, the cheese on top is sliced rather than shredded. It is typically fresh mozzarella cheese. One of the best things about this pizza is all the fresh ingredients. The flavors are simple and absolutely delicious.

This pizza is a little bit of a labor of love. But don’t be intimidated by the peeled tomatoes! If it seems like too much, use some delicious canned tomatoes. We even do that sometimes.

But if you are peeling your tomatoes, we have a simple way for you. Bring water to a boil in a medium saucepan. On the bottom of each tomato, cut a shallow X with a paring knife. Do not cut the flesh! With a large slotted spoon, drop each tomato in the boiling water. When the skin begins to curl back at the X, after 15-30 seconds, remove the tomatoes and place them in ice water to stop the cooking. Then simply peel off the skin.

This makes one 16 inch pizza or 2 12-inch pizzas. We prefer a nice thin crust, especially for Margherita.

On this recipe, we use our basic pizza dough. The tuscan sun dough is out of this world, but it does take more time. The basic dough is ridiculously fast and easy! It is a matter of minutes to get this dough ready.

This is a recipe that only costs a couple of dollars. We love pizza night, but it can get expensive when going out! When you make it at home, it can be simple, cheap, and delicious.

We love this pizza! Add it to your menu for your next pizza night. It may take a little time, but you will not regret it! You cannot beat the flavor of a homemade authentic margherita pizza. Enjoy!

We love making these cookies at Christmas time! They are always a crowd pleaser. And it doesn’t hurt that they are quick and easy!

These cookies are best eaten the same day. If you are wanting to save them for later, wait for them to cool. Then place them in a plastic bag and freeze. They are even delicious straight out of the freezer!

If you are not a big fan of chocolate, you can make these without the kisses. Use a tablespoon of dough and roll in a ball. Bake for 10-12 minutes. Then roll the warm cookies in powdered sugar. With or without the chocolate, these cookies are sure to impress!

If you like Mexican Wedding cookies or Russian Tea cakes, these are very similar. The dark chocolate in the center is what sets these apart.

Make these to bring to your neighbors, or to share at a party. But whatever you do, enjoy!
