FN Chocolate Mousse Pie

Ingredients

⅓ cup plus ½ Tablespoon Butter
- ¼ cup Semi-Sweet chocolate chips

¼ cup plus 2 Tablespoons sugar
- 2 eggs

½ cup White Kamut Flour
- 1 cup plus 1 Tablespoon Heavy whipping cream
- ½ teaspoon vanilla
- 1 cup plus 1 Tablespoon Semi-Sweet Chocolate Chips
- 1 cup plus 1 Tablespoon Heavy Whipping cream, whipped

Crust Instruction
- In a saucepan on top of the stove, melt the butter and chocolate over very low heat. As soon as it melts, take it off the stove. (do not let it boil at all)
- Mix sugar and eggs separately and add to the pan.
- Sift the flour and add that to the mixture and stir until smooth. (does not have to be every bit smooth)
- Butter and flour a 9.5inch pie pan and pour the mixture into the pan.
- Bake for 12 minutes at 350
- Let cool for 10 minutes at least before topping with the Mousse.
Mousse Instruction
- Place the 1 cup cream plus 1 Tablespoon and vanilla into a saucepan and bring to a boil.
- Take off the stove and add the chocolate chips. Stir until smooth
- Let the pan cool to room temperature when you touch the bottom of the pan.
- Whip the heavy whipping cream until still and fold into the cooled chocolate mixture. Don’t overmix.
- Pour the Mousse on top of the chocolate crust and let sit in the refrigerator for at least 2 hours. Cut and serve.
