Ingredients
-
1 cup (2 sticks) butter, cold
-
1 cup white sugar
-
1 cup brown sugar
-
2 eggs
-
¼ cup Sourdough Discard (*optional)
-
1 teaspoon Food Nanny vanilla extract
-
1½ cups Whole Wheat Kamut Flour
-
1 teaspoon baking soda
-
½ teaspoon sea salt
-
3 cups old-fashioned or quick cooking rolled oats
-
2 cups of your choice of chocolate chips (semi sweet, milk chocolate, or half and half).
Directions
Preheat the oven to 350°. Prepare a baking sheet with parchment paper.
Beat butter, sugar, brown sugar, vanilla and eggs in a large bowl of an electric mixer or with a hand-held mixer until blended. Beat for 1 minute.
Whisk together flour, baking soda and salt in a small bowl. Add to the butter mixture and blend well.
Stir in oats and chocolate chips with a wooden spoon or dough hook.
Scoop dough into 2 Tablespoon balls and place on the prepared baking sheet.
Bake in a preheated oven for 8–10 minutes. Let sit on the cookie sheet for 3 minutes. Move to a cooling rack to cool.
These are flatter, crispier cookies. Store them in the freezer in a Ziploc bag so they don’t go stale.
