On our most recent trip to France, we tried this unbelievable watermelon salad. We couldn’t believe how delicious and refreshing it was!
It is the perfect thing to eat all summer long. So we decided to create our own version. And let us tell you, this salad does not disappoint!
This watermelon salad is a meal in and of itself! We love to pair it with our delicious Kamut baguettes. It ends up being a quick and delicious meal.
We love the greens in it as well as the zucchini noodles. They both provide different textures that make this salad so unique and fun. Plus, you can’t beat the health benefits of these amazing green vegetables.
If you want, you can use half greens and have spinach. And as for the zucchini noodles, you can find them already spiraled at most grocery stores now!
Something else we love to do is to add pomegranate seeds. The salad is still yummy if you don’t have them, but they add the perfect flavor. They can be hard to find though, so don’t stress if they don’t end up being a part of your salad.
It may seem like the salad is made up of random ingredients that don’t work together but it will surprise you! Everything comes together and forms the perfect melody. I was nervous about the prosciutto, but it is the perfect protein for this salad.
We decided to top the salad with feta, but we know this cheese can be tricky for some. If you do not eat or like feta, feel free to try a different cheese! Or if cheese isn’t your thing, just leave it out. Your salad will still be amazing.
When it comes to good watermelon, it can be hard! There is nothing worse than getting home and cutting up a soggy melon. But the taste of a fresh juicy one is worth all the struggle! What are your secrets to finding the perfect watermelon?

- 6 cups baby greens
Seedless watermelon cubes
Grape tomatoes cut in half
Thinly sliced purple onion
Feta cheese crumbles
Thin slices of prosciutto
Seedless Kalamata olives
- Fleur de sel salt
Fresh ground pepper
Extra virgin olive oil
Place the Greens in a bowl. Add the other ingredients to taste! Serve right away, and enjoy!
