Mango Sticky Rice

Ingredients
- 2 cups water
- 1 ½ cups uncooked short-grain white rice
- 1 ½ cups coconut milk

1 cup white sugar

¼ teaspoon salt
- 3 Mangos
Directions
In a saucepan combine the rice and water bring to boil. Cover and let simmer for 15 to 20 minutes.
- In another saucepan, combine coconut, milk, sugar, and salt. Bring to boil. Remove from heat.
- Once the rice is cooked, combine the rice with the sauce. Serve it warm or chill in the refrigerator up to an hour.
- Slice the mangoes
- Serve up a scoop of rice top with mangos
Recipe Note
Variation:
In a small saucepan, combine ½ cup coconut milk, 1 tablespoon sugar, 1 tablespoons cornstarch, and ¼ teaspoon salt.
Bring to boil remove from heat. Drizzle over the rice.
