Flapjacks with Oats and Whole Wheat

Ingredients

  • 4 cups quick oats
  • 2 cups White Kamut flour
  • 2 cups Kamut wheat berries
  • 1 cup brown sugar
  • 1 cup powdered milk
  • 1 tbsp baking powder
  • 2 tsp cinnamon
  • 2 1/2 tsp French grey salt
  • 1/2 tsp cream of tartar
  • 2 large eggs beaten
  • 1/3 cup canola oil
  • 2 cups dry mix
  • 1 cup water

Instructions

Make the Mix:

  1. In a medium size bowl add the first 9 ingredients. Stir together with a spoon. (Store in an airtight container up to one month to have on hand.)

Make a small batch of pancakes, about 6:

  1. In a small bowl whisk eggs. Add canola oil, 2 cups dry mix, and water. Mix with a spoon until blended.

  2. Cook on a lightly oiled griddle at 360 degrees. When you start to see holes in the batter appear and then break, turn the pancake over.
