In a medium size bowl add the first 9 ingredients. Stir together with a spoon. (Store in an airtight container up to one month to have on hand.)
In a small bowl whisk eggs. Add canola oil, 2 cups dry mix, and water. Mix with a spoon until blended.
Cook on a lightly oiled griddle at 360 degrees. When you start to see holes in the batter appear and then break, turn the pancake over.
