Author: The Food Nanny
Ingredients
  • 4 strips bacon, cooked and crumbled
  • 1 1/2 pounds fresh green beans, rinsed, ends snipped, snapped in half, cooked
  • 2 tablespoons sugar
  • 2 tablespoons soy sauce
  • 3/4 teaspoon coarse salt
  • 1 tablespoon bacon grease, (optional)
  • 1 tablespoon olive oil
  • 1 small red onion, sliced thin
  • 5 cloves garlic, minced
  • Fresh ground black pepper to taste
Instructions
  1. Fry the bacon on top of the stove, or place bacon on a small baking sheet and bake at 425 degrees for 20 min. until crisp. Save 1 Tablespoon bacon grease. Let cool on paper towel. Crumble. Set aside.
  2. Fill a large pot with water. Bring to a boil. In the meantime rinse the beans, snip the ends off, then snap in half and add to the boiling water. Boil for 5 min. Drain off all the water, very important. Set aside.
  3. In a small bowl mix together sugar, soy sauce and salt. Set aside.
  4. In a large frying pan over medium add the bacon grease and olive oil. Add the onion and sauté until caramelized, at least 5 min. Add the garlic and stir until you can smell the aroma. Add cooked beans. Stir for 2 min. Add the cooked bacon pieces. Stir. Pour on the sugar mixture. Stir-fry for about 3 more min. Add fresh ground black pepper to taste.
