7 Recipes your Cinco de Mayo party needs

One of our favorite nights of the week has always been Mexican night! We really can't get enough. All of our recipes are amazing, but our Mexican food is some of our very best!

With Cinco de Mayo coming up, we thought it would be fun to compile some of our favorite Mexican food items! If you are making dinner for a group, we have you covered! If you are keeping things simple and eating with your family, we have something for you. And if you happen to be bringing a side to a Cinco de Mayo party, look no farther!

We have pages and pages of ideas for Mexican night, so feel free to check out both our cookbooks for some more ideas! But we promise, you will not be disappointed in ANY of these ridiculously good recipes.

1.Nachos Nachos Nachos. We can't get enough! Our new FN steak nachos are incredible. But if meat is not your thing, check out our simple meatless nachos with beans and cheese. So delicious!

4. Chicken Taquitos: If you are bringing something to a Cinco de Mayo potlock, we have the recipe for you! Both kids and adults can't get enough of these.

5. Chicken Burrito's with Salsa Verde and Lime: If you have never tried these burritos, nows the time! The sauce that goes on top is out of this world.

6. Pina Colada: We love these so much, we are going to do a live on them this Friday! You can keep these ingredients on hand whenever you need a little Mexican Fiesta in your life!

7. Fruit Salsa with Cinnamon Strips: This may not be your typical Mexican appetizer, but your guest will not complain! It is sweet and absolutely delicious. It is the perfect way to start your party!

Chicken Burrito's With Salsa Verde And Lime
FullSizeRender This is burrito is seriously better than any one you can get out at a restaurant. It's perfection with our Santa Fe Lime Rice, chicken and black beans. Then to top it off you pour on our sauce, it's so good you want to just drink the sauce alone. You will be very satisfied after making this dinner.

Chicken Burrito's With Salsa Verde And Lime

6 Servings


  • Santa Fe Lime Rice (p.123)
  • 1 pound boneless (skinless chicken breasts)
  • Salt and ground black pepper
  • 1 15-oz can blacked beans, drained
  • 6 burrito-size flour tortillas
  • 1 cup 4 ounces shredded Pepper Jack cheese or Monterey Jack


  • 1 cup bottled salsa verde
  • 1 0.4-ounce packet buttermilk dressing mix
  • 1/3 cup chopped fresh cilantro (optional)
  • 1/3 cup sour cream
  • 1/3 cup mayonnaise
  • 1 teaspoon minced garlic
  • 1/2 teaspoon coarse salt
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon ground cumin
  • 1/4 cup sugar
  • Dash Tabasco (optional)
  1. Prepare the rice and keep warm.
  2. Meanwhile, grill (or broil) the chicken breasts over medium heat, 6 to 8 minutes per side, until tender and no longer pink. Shred the chicken with two forks. Season with salt and pepper.
  3. To make the sauce, put all the sauce ingredients in the blender and blend until smooth. Heat the sauce in a saucepan or the microwave.
  4. Heat the black beans in a saucepan or the microwave.
  5. To assemble burritos: Divide the chicken among the 6 tortillas. Add a scoop of rice and a scoop of beans to each one. Fold up the bottom third of one tortilla over the filling, fold in the sides, and then fold down the top. Repeat for the remanning tortillas.
  6. Preheat the broiler to low and adjust the oven rack to about 6 inches from the heat. Place the filled burritos seam side down in a broiler pan, or oblong metal pan, and pour the sauce over all. Sprinkle with the cheese.
  7. Place the pan under the broiler. Watch closely and broil until the sauce is bubbly, just a few minutes.
  8. Serve with chips and salsa.
