This is the way my Grandma served the fresh beans from her garden. Except she used all bacon grease and no soy sauce. You may finish the beans off with freshly grated Parmesan cheese. You can put fresh Parmesan on just about anything and I DO!!!!! ha-ha. Take them to your next potluck... or spoil yourself and make them as a yummy side dish... it serves well with just about anything! xo
FRESH GREEN BEANS WITH GARLIC AND BACON
- 4 strips bacon (cooked and crumbled)
- 1 1/2 pounds fresh green beans (rinsed, ends snipped, snapped in half, cooked)
- 2 tablespoons sugar
- 2 tablespoons soy sauce
- 3/4 teaspoon coarse salt
- 1 tablespoon bacon grease ((optional))
- 1 tablespoon olive oil
- 1 small red onion (sliced thin)
- 5 cloves garlic (minced)
- Fresh ground black pepper to taste
- Fry the bacon on top of the stove, or place bacon on a small baking sheet and bake at 425 degrees for 20 min. until crisp. Save 1 Tablespoon bacon grease. Let cool on paper towel. Crumble. Set aside.
- Fill a large pot with water. Bring to a boil. In the meantime rinse the beans, snip the ends off, then snap in half and add to the boiling water. Boil for 5 min. Drain off all the water, very important. Set aside.
- In a small bowl mix together sugar, soy sauce and salt. Set aside.
- In a large frying pan over medium add the bacon grease and olive oil. Add the onion and sauté until caramelized, at least 5 min. Add the garlic and stir until you can smell the aroma. Add cooked beans. Stir for 2 min. Add the cooked bacon pieces. Stir. Pour on the sugar mixture. Stir-fry for about 3 more min. Add fresh ground black pepper to taste.
